I’ve Got the Blue Fish Blues
Pretty brilliant and easy:
1 pound bluefish fillets
1/4 cup orange juice
1 lemon – squeezed and discarded
olive oil
1 tablespoon dry white wine
kosher salt and ground black pepper to taste
Marinate for 30 minutes, then put on pan with olive oil on high heat for 4 minutes a side.
